Choco-Raspberry S’mores Biscuit

What you need:

  • 8 marshmallows
  • 1 cup self-rising flour
  • 1/2 cup mini chocolate chips
  • 1/2 cup water
  • 1/4 cup seedless raspberry jam
  • 3 tablespoons whole milk powder
  • 2 1/2 tablespoons sugar
  • 2 tablespoons canola oil
  • Extra-virgin olive oil (for brushing)
  • 4 large rosemary branches (bottom 3/4 of the leaves stripped off)

Mix the flour, milk powder and sugar in a bowl. Whisk in the canola oil then the water to make the batter. Add the chocolate chips. Brush a rimmed griddle with olive oil then scoop 8 1/4-cup rounds of the batter onto it. Cook over low fire for 1-2 minutes or until bottoms are browned. Flip, spread jam on top and cook for 2 minutes more.

While biscuits are cooking, thread the marshmallows into the rosemary branches and cook over the campfire until melted and golden. When everything is ready, sandwich a marshmallow between 2 biscuits (jam side in). Remove skewers and serve.

The S’mores Skillet

What you need:

  • 1 sleeve graham crackers, cut into squares
  • 1 bar Hershey’s milk chocolate bar, cut into squares
  • 1 1/2 cups marshmallows

Layer the graham crackers, chocolate pieces and marshmallows in a large cast-iron skillet. Place the skillet on a grate over a campfire and cook for a few minutes or until marshmallows are toasty and chocolate pieces have melted. Remove from heat and allow to cool for a few minutes before serving.

Banana-Stuffed S’mores

What you need:

  • 1 large banana
  • Chocolate bar of your choice, broken into small pieces
  • 3-5 pieces graham crackers, broken into small pieces
  • Mini marshmallows

Peel one “strip” from the banana peel, scoop out the fruit and slice into small pieces. Be sure to keep the rest of the peel intact. Mix the banana, the chocolate, graham crackers, chocolate pieces and mini marshmallows in a bowl. Scoop and stuff inside the peel. Heat over a campfire grate until the chocolate has melted, abou 1-2 minutes. Cool for a few minutes then serve!
